The Grand has been a convent (15th century), the Dutch Admiralty (17th century), and Amsterdam's City Hall (until 1988). The 177 rooms occupy these layered historical spaces — the courtyard garden, the Karel Appel mural in the former civil marriage room, and the original Gothic chapel create a hotel of unusual depth. Bridges restaurant serves Asian-European fusion. The spa is among Amsterdam's best.
