Why It Belongs on the List

Uchi opened in 2003 in a converted South Lamar bungalow and immediately established Austin as a serious fine dining city. Chef Tyson Cole trained in Japan and brings genuine Japanese technique to a menu that foregrounds seasonal Texas ingredients — Gulf snapper, Hill Country peaches, local farms — treated with the precision of kaiseki. The hot tastings and cool tastings format allows you to build a personalized meal. The sake program is excellent. Uchi spawned Uchiko (its sister restaurant) and the Hai Hospitality group, but the original remains the benchmark. Book 2-3 weeks in advance for weekend tables; Monday–Wednesday is more accessible.
